Homemade with Helen is a series that will be released every month with a new homemade recipe that everyone can make! 

The recipe this month is: Easy soft cheese and beetroot pasta

As the new year rolls in you might be wanting to try some more healthy and colourful food, well this pasta dish is great for that! The dish can be made for 2 people but can easily be made for 4 people just by increasing the ingredients. 

All the ingredients can be found at the supermarket or grocery. Ingredients needed:

100g Fresh or dried pasta

100g soft cheese such as goat’s cheese or cream cheese 

50g sliced or shredded cooked beetroot 

Rocket leaves or salad to serve

Instructions: 

Step 1: cook your chosen pasta according to the instructions on the packert. Most supermarkets sell lots of types of pasta, maybe try a new shape or one made from spinach (we have used spinach linguine) 

Step 2: drain the pasta and stir in your chosen soft cheese, it can be whichever you like for example feta or goats cheese. 

Step 3: either top with pre cooked beetroot or cook your beetroot and add on top, you can shred it or grate it.  

Step 4: serve with salad or vegetables
